Tying Down Session

The vines are left vertical during the coldest months of the year, to avoid the worst of the frosts, once we enter Spring we tie the vines down, training them horizontally. This allows us to set up a system called Double Guyot which sets the vines up to be shaped something like a candelabra and importantly encourages the grapes to develop and ripen at a much more similar rate than they would otherwise. This means we do not need to harvest the same vines more than once and is integral to get done at the right time before buds are appearing and manipulating the vines becomes a much riskier job. These sessions start at 8.45am and finish about 1pm for lunch. There’s no workshop for this job in the vineyard as it is simple and relaxing.
